About Consultant Guest Chef Hiroshi Ishii ![]() After nearly 21 years at the helm of Pan Pacific Singapore's famed Japanese Restaurant, Keyaki, Master Chef Hiroshi Ishii rightfully commands true respect not only from customers, but also from peers and colleagues. Joining Keyaki in 1988, he lost no time in establishing the restaurant's reputation and bringing its menu to the attention of Japanese cuisine lovers. Prior to his appointment in Singapore, Master Chef Ishiii was the Executive Chef at many of Japan's ryotei restaurants - exclusive establishments where dining is contingent upon membership and membership by recommendation. At Keyaki restaurant, Master Chef Ishii not only mentored budding culinary talent but also established the dining establishment in the forefront of classical Japanese cuisine, presenting seasonal menus in true tradition. With a stable of protégés under Master Chef Ishii's tutelage and guidance, Keyaki continues to delight customers who experience meals that bring about true satisfaction, on the à la carte menu with a host of selections featuring kobachi, sashimi, sushi, tempura, teriyaki, soba, udon to hot pot specialties shabu shabu and sukiyaki. Teppanyaki and robatayaki selections also count of the list of must-try items. Keyaki's signature dishes, fastidiously crafted by the doyen himself, include kaiseki (literally translated as blessings from Heaven: a delicate tasting menu where seasonal ingredients are presented as culinary art to enhance the flavours and appearance) and the wide array of robatayaki (grilled food) where exotic seafood and other delectable ingredients are available for indulgence. The ultimate credential of a fine Japanese restaurant lies in its chef's culinary skills to deliver kaiseki - the haute cuisine of Japanese cooking, and Master Chef Ishii's masterful creations in this dining experience are truly the work of a maestro. With over thirty years of experience in fine Japanese cuisine, Master Chef Ishii is one of the few chefs in Singapore with a license to handle puffer fish and is renowned for his flavourful and exquisite menus. He displays an innate understanding of culinary art and creativity in combining seasonal ingredients into delightful masterpieces that enthrall the senses. Master Chef Ishii handed over the reins at Keyaki to Master Chef Hiroshi Kagata in September 2009, when Keyaki re-opened after an enhancement exercise that took four months and cost approximately SGD$2million. Today, Master Chef Ishii continues to uphold the standards of classic Japanese cuisine in his capacity as Japanese Chef Consultant for Pan Pacific Hotels Group. He is involved in opening projects as well as refreshment exercises for Japanese dining establishments within the group. - End -
