Make it BIG at Parkroyal this Lunar New Year! Singapore, January 10 2008: Usher in the Year of the Rat with a BIG Feast at Parkroyal and bring in large doses of health, wealth, luck and prosperity this Lunar New Year! The Parkroyal hotels have each lined up its own BIG spread of Lunar New Year specialties to give you a big headstart to the brand new 12-year cycle of the lunar calendar. Parkroyal's Prosperity Feasts: It’s triple the fortune at Parkroyal hotels, as diners can toss to wealth not once, but three times, with its three varieties of Yu Sheng in its Prosperity Feast buffet. New on the spread is the Three Kingdoms Yu Sheng (三国鱼生), specially created by Executive Chef Jackson Goh from Parkroyal on Beach Road, who has given a delectable twist to this age old favourite. It features a trio of lunar new year treats – bundles of golden shark’s fin, slices of precious abalone and slivers of springy sea cucumber, – all tossed up in a bed of salmon slices, bak kwa (barbequed pork) strips, radish, carrot, golden mushrooms, alfalfa and daikon sprouts in a fruity homemade plum sauce, crowned with crispy yam vermicelli and a colourful sprinkling of edible flowers. Guests can also customize their own Traditional Yu Sheng, taking their pick from the array of ingredients on the spread and crafting it to suit their own tastes. Another winner from last year’s feast is the Japanese Yu Sheng, a refreshing combination of sliced salmon, tuna, octopus and shrimp roe tossed with shredded radish and seaweed in wasabi lemon shoyu sauce. But what makes the feast truly BIG this year is the unlimited servings of Buddha Jumps Wall (御品佛跳墙) on the buffet spread, a flavourful broth of premium treasures such as abalone, shark’s fin and fish maw. Over at Spice Brasserie at Parkroyal on Kitchener Road, Executive Chef Ho Kok Choi has created an auspicious array of Eight Treasures Delicacies (八宝贺岁如意丰收) for its Prosperity Feast buffet. This BIG spread comprises eight varieties of appetizers, main courses and cookies. The appetizer menu includes eight exotic creations, each with a special significance for the Lunar New Year:
Chef Ho has also cleverly infused eight ingredients (ie. 'treasures’) that complement or add flavour to each of his Eight Treasures main courses, which includes seasonal delights such as black moss, waxed meat and conpoy. For instance, his signature Eight Treasures Glutinous Rice is a heavenly treat of steamed glutinous rice with waxed pork belly, liver sausage, pork sausage, waxed duck, salted fish, dried shrimp, mushroom & chestnut. To end off the Prosperity Feast on a sweet note, guests can enjoy eight different types of Lunar New Year Cookies – Pineapple tartlet, walnut cookies, sesame cookies, love letters, lotus root candy, lotus seed candy, red date candy and pineapple candy. There is also an Eight Treasures Dessert (八宝安康万寿无疆). This sweet concoction of eight treats – red bean, green bean, barley, bubor hitam, red date, dried longan, dried orange peel & sweet potato – is doubled-boiled in honey rock sugar, to cool and detoxify the body after all the heavy feasting. Hai Xiang Restaurant Executive Chinese Chef Poon Dor Kou has put together a BIG selection of Poon Choy (聚 宝 盆 菜), a traditional Lunar New Year dish layered with 18 culinary delights – sea cucumber, pork knuckle, fish maw, abalone, pork tendon, dried scallops, roast duck, beancurd rolls, mushroom, white radish, cabbage, fried fish fillet, prawn, pork and black moss rolls, homemade fish balls, steamed chicken, roast pork and black moss. The items are first individually cooked on its own, then carefully assembled in a large dish and steamed for four hours. Ingredients that are able to soak up the most flavour, such as beancurd rolls and radish, are placed at the bottom, gradually building up so that the flavours of each item blend naturally to form a delicious whole. Priced at $188 (6 pax.) and $288 (10 pax.), this classic creation is a sumptuous meal in itself and is available for both dine-in and takeaway at Hai Xiang Restaurant. Other noteworthy signature creations for the season by Chef Poon include Double-Boiled Hashima in Almond Cream with Bird’s Nest (雪蛤杏仁露), Braised Longevity Rice Noodles in Crabmeat Sauce (蚧钳面线) and the Golden Treasure Bag (黄金满袋) – a harvest of crunchy vegetarian delights wrapped in beancurd skin. This bundle of wealth is stuffed with white fungus, straw mushrooms, waterchestnuts and bamboo pith, amongst other wholesome ingredients.
